El pasado 29 de octubre, la Agencia Española de Seguridad Alimentaria y Nutrición (AECOSAN) ha publicado las recomendaciones de consumo de pescado para la población por presencia de Mercurio.

De lo primero que tenemos que hablar es de qué es este mineral y cómo llega hasta la materia prima que consumimos. El mercurio (Hg) es un elemento químico que forma parte de la corteza terrestre y aparece como impureza en otro mineral que se llama pirita. Al encontrarse en la naturaleza, es fácil pensar que pueda estar presente en nuestro entorno y así es, se libera por la actividad volcánica y por la erosión de las rocas por acción del viento y el agua.

No debemos olvidar que el mal uso del planeta que hacemos hace que este mineral esté todavía más presente por su liberación al medio ambiente a través de actividades de la industria, la minería, la combustión de fósiles y la ausencia de reciclado de pilas, lámparas, fluorescentes, etc. entre otros.

¿Dónde está el límite?

Los niveles de ingesta tolerable semanales establecidos por la EFSA (Autoridad Europea de Seguridad Alimentaria) en 2012 son de 1,3 µg/kg de peso corporal de metilmercurio.

¿Cuáles son las especies a evitar?

Emperador o pez espada, atún rojo, cazón, pintarroja o pintada de Cantabria, lucio, tintorera y marrajo. Recordaros que evitar no quiere decir NO consumir.

Por esta razón las recomendaciones que se realizan son:

  • Evitar las especies con alto contenido en HG:
    • Los meses previos al embarazo, tanto en hombres como en mujeres.
    • Mujeres embarazadas
    • Durante el periodo de lactancia
    • Niños y niñas hasta los 10 años
  • Limitar (120g/mes como máximo)
    • Niños y niñas entre 10 y 14 años
  • Para el resto de la población, se recomienda consumir especies con bajo y medio contenido en Hg 3-4 veces/semana alternando pescado blanco y azul.
